An interesting compromise that has some beef is the Mediterranean diet which gets you at least half-way to a vegan diet. See: UCLA: Vegan, Mediterranean diets have lower carbon footprints than standard U.S. diet (https://newsroom.ucla.edu/releases/paleo-keto-climatarian-diet-carbon-footprint)

Odd take on how they label a “Climatarian diet” as one with higher emissions than a Mediterranean diet. I’d simply add that a Mediterranean Diet where you substituted all of the beef (and lamb) for fish, chicken & pork would lower emissions even more without eliminating meat.
